This is a great hearty beef stew over noodles recipe. Awesome meal for any season or weather.
Ingredients:
1 1/2 pounds of fresh beef of your choice (London broil works well)
1 Pound wide egg noodles
8 Oz. tomato paste or diced tomatoes
2 Teaspoons salt of your choice
1/3 Cup all-purpose flour
2 Tablespoons garlic powder
1/2 Teaspoon ground black pepper
8 Tablespoons olive oil
3 Tablespoons red wine vinegar
1/2 Cup of red or blushed wine (the darker, the better)
4 Cups beef broth, bought or homemade
3 Bay leaves (remove once the dish is cooked)
1 Medium onion, recommend red or Vidalia, peeled and chopped well
1 1/2 cups of cut carrots (cut 1 -2 inches long, 1/2 inch thick)
2 large potatoes of your choice, unpeeled and cut to approximately 1 inch squares
Directions:
Mix well the flour, pepper, salt, and olive oil into a bowl.
Cut the beef into approximately 1 inch cubes.
Add beef to flower, oil, salt, and pepper mix. Combine until beef is evenly covered in mixture.
Lightly coat a (non-stick if possible) pan large enough to hold all ingredients with olive oil, place the beef into the pan and cook at medium heat until all sides of the beef are browned well.
Remove beef from pan and add vinegar and wine to the same pan. Cook over a medium heat using a wooden spoon to free any beef portions that may remain in pan. Just before boiling occurs, add the beef, beef broth, garlic, and bay leaves. Bring to a boil briefly then reduce heat to a slow simmer.
Cook for approximately 45 minutes at a slow simmer stirring occasionally and skimming froth if it develops and if desired.
Now add the potatoes, onion, and carrots. Bring to a brief boil then reduce the heat to a slow simmer for another 45 minutes partly covered. If stew becomes too dry, add more broth or water but stew should be allowed to thicken slightly when finished cooking.
Add the tomato paste about 10 minutes prior to the end of final simmer and stir in well. Slow simmer for approximately 10 minutes more.
About 10 minutes before the stew is finished or at the same time the tomato paste is added, place a 1 pound package of wide egg noodles into boiling water. Allow noodles to boil as per your liking.
The stew should now be finished cooking. Drain and rinse the noodles and remove bay leaves.
Place desired amount of noodles in a bowel, ladle in desired amount of stew, salt an pepper to taste and enjoy!
